3 medium chicken breasts, skinless and boneless
2 ½ cups canned black beans, drained and rinsed
1 1/3 cups canned pinto beans, drained and rinsed
1 1/3 cups canned sweet corn, drained and rinsed
2 ½ cup canned tomatoes, chopped
1 tsp chipotle paste
3 tbsp Greek yogurt
1 ½ tbsp Cajun seasoning
4 Tbsp cumin powder
HOW TO MAKE THIS MEXICAN-CHIPOTLE CHICKEN CASSEROLE:
Step 1. Grease a casserole dish with cooking spray.
Step 2. Add black beans, chopped tomatoes, pinto beans, and sweet corn in a large bowl. Mix until everything combines well.
Step 3. Add Cajun seasoning, chipotle paste, and ground cumin to the bowl and toss to ensure an even distribution.
Step 4. Spread half of the veggie mixture in the greased casserole dish.
