Ingredients ;
4 tortilla wraps
2 chicken breasts, diced into 1”x3” chunks
1 medium red onion, sliced
1 medium green bell pepper, deseeded and sliced
1 medium yellow bell pepper, deseeded and sliced
1 garlic clove, minced
1 tsp chili sauce
1 tsp coriander powder
½ tsp cumin powder
1 ½ tsp smoked paprika
4 tbsp Greek yogurt
Salsa, as required
HOW TO MAKE THIS CHICKEEN FAJITS:
Step 1. Spray a frying pan with cooking spray.
Step 2. In a bowl, mix garlic, ground coriander, smoked paprika, cumin, and a dash of chili sauce.
Step 3. Add thinly sliced chicken and toss gently to coat with the marinade and set aside.
Step 4. Place the frying pan over medium heat. Once the pan is hot, add marinated chicken and cook for 2 minutes or until the color turns golden brown; ensure to stir.
Step 5. Then add peppers and onions. Stir well and continue to cook for 5 to 7 minutes or until veggies are brown and tender.
Step 6. Arrange tortillas separately on little damp paper towels and place them in the microwave oven, heat until tortillas are warm.
