Ingredients:
1 egg, large
¼ cup butter, sweet cream
1/3 cup granulated sugar
¼ cup milk, whole
½ tsp. baking powder
Juice of ½ lemon
Zest of ½ lemon
¾ cup all-purpose flour, divided
1 cup fresh blueberries
¼ tsp. salt
For The Icing:
2 tbsp. confectioners’ sugar
2 tbsp. Lemon juice
Instructions:
- Prepare a 9×5 loaf pan by coating it with cooking spray.
- In a mixing bowl, add butter and sugar, and blend using an electric mixer until creamy.
- Add milk and egg to the mixture while continuing to beat it.
- Add lemon juice and mix well.
- Add baking powder, flour, lemon zest, and salt in another bowl, and whisk until well combined.
- Gradually add the dry mix into the wet mix while beating until just combined; do not overdo it.
- Add 1 ½ tablespoons of flour in a small bowl and coat blueberries with flour.
- Gently fold half of the blueberries into the batter using a slotted spoon. Keep the rest aside.
- Pour the batter into the loaf pan and sprinkle the remaining blueberries.
- Place in the preheated oven at 350°F and bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.
- Once done, allow to sit the loaf in the pan for 5 minutes after removing it from the oven.
- Transfer the loaf from the pan to a wire rack to cool completely.
For The Icing:
- Add lemon juice and confectioners’ sugar in a separate bowl and whisk until smooth. Adjust the consistency by adding more lemon juice as needed.
- Use a wooden spoon handle to poke holes halfway down into the loaf.
- Pour the icing over the loaf, filling the holes and covering the entire surface.
- Let the loaf cool down completely before slicing and serving.
