20-ounce canned clams, roughly chopped
4 slices bacon, chopped
2 large potatoes, diced
1 medium yellow onion, diced
2 garlic cloves, minced
1 ½ cups heavy cream
2 cups canned clam juice
1 tbsp corn starch
¼ cup unsalted butter
¼ tsp Italian seasoning
¼ tsp black pepper
Salt to taste
HOW TO MAKE THIS INSTANT POT CLAM CHOWDER ;
Step 1. Open the clam cans and transfer the clams to a plate. Pour the cans of juice into a measuring cup and add water to make 2 cups. Set clams and juice aside.
Step 2. Switch on the instant pot, set it to sauté mode, add chopped bacon, and stir-cook until crispy.
Step 3. Add onion, butter, thyme, minced garlic, salt, and pepper. Continue to sauté until onions are soft and translucent.
Step 4. Add the salt, garlic, and pepper to the Instant Pot and continue to stir for 1 minute.
Step 5. Then add 2 cups clam juice and diced potatoes and mix well.
Step 6. Seal Instant Pot, switch to manual high pressure, and cook for 4 minutes.
Step 7. Once done, allow a natural release for 5 minutes, followed by a quick release.
Step 8. Open the Instant Pot, set to sauté, and pour in the half and half and clams. Mix well.
Step 9. In a small bowl, mix cornstarch with a tablespoon of liquid from the pot, pour in the instant pot, and stir until the chowder thickens.
Step 10. Switch off the instant pot, transfer the chowder to the serving dish, and garnish with bacon bits and green onions. Serve hot.
