Ingredients:
1 1/8 cups all-purpose Flour
3 tbsp canola Oil
3 tbsp Unsalted Butter, softened
¾ tsp. Vanilla Extract
¾ cup Sugar
2 whole Eggs
¾ tsp. Baking Powder
½ tsp. Molasses
1/3 cup Buttermilk
½ tsp. Cinnamon powder
½ tsp. Salt
For The Topping:
1/3 cup Unsalted Butter, melted
3 tbsp. Granulated white Sugar
3 tbsp. light Brown Sugar
½ tsp. Cinnamon powder
Instructions:
- Coat a loaf pan with non-stick spray.
- Mix oil, butter, and sugar in a bowl until smooth.
- Add vanilla extract and eggs, and continue mixing until smooth.
- Slowly add dry ingredients (flour, baking powder, salt) and buttermilk, alternating, and mix well after each addition.
- Scrape the bowl to combine all ingredients, ensuring no lumps remain.
- Set aside ½ cup of the batter in a separate bowl.
- Add cinnamon and molasses into the reserved batter and mix until thoroughly combined.
- Spread half of the plain batter in the loaf pan.
