Ingredients:
¼ cup unsalted butter softened
2 cups cream cheese, softened
1 cup sour cream
3 large eggs
1 cup granulated sugar
1 tbsp. cornstarch
1 tsp. vanilla extract
½ squeeze of lemon, fresh
½ tsp. lemon zest
Instructions:
- Preheat your oven to 300°F (150°C) to prepare it for baking.
- Prepare a 6″ springform pan by lightly greasing it with cooking spray.
- Add butter and cream cheese in a bowl and whisk smoothly and consistently.
- Add eggs one by one, making sure to beat well after each addition.
- Mix in Sour Cream until everything is nicely blended.
- Add lemon juice, Cornstarch, vanilla, lemon zest, and sugar, and beat until smooth batter.
- Pour the batter into the prepared pan.
- Place the pan in the preheated oven at 300°F and bake for 1 hour and 15 minutes, or until the center is nearly set.
- Once baked, remove from oven and let it cool completely for around 3 hours.
- Finally, chill the cheesecake in the refrigerator for at least 1 hour before serving to ensure it sets properly.
