Ingredients:
For The Cake:
1 1/3 cups granulated Sugar
1/3 cup plus 1 tbsp. butter
3 eggs
2/3 tsp. Maple extract
1 1/3 tsp. Vanilla extract
2 cups Flour
2/3 cup whole Milk
1 1/3 tsp. baking powder
2/3 tsp. Salt
For The Pecans:
1 cup Pecans, roughly chopped
2/3 tbsp. Butter
For The Frosting:
1 cup Cream Cheese, softened
2/3 cup unsalted Butter
4 cups Confectioners’ Sugar
2/3 tsp. Vanilla extract
2/3 tsp. Maple extract
1 tbsp Milk
Instructions:
- Prepare a 9×9 baking pan by spraying it lightly.
- Place a small skillet over medium-high heat, add 2/3 tablespoon of butter, and let it melt.
- When butter melts, add pecans to the skillet and stir them for 4 to 5 minutes or until toasted. Remove them from the heat and set aside.
- Add 2/3 cup of sugar and 2/3 cup of butter in a medium mixing bowl and beat until the mixture becomes fluffy.
- Add eggs to the butter and sugar mixture, one at a time, followed by maple extract and vanilla.
- In a separate bowl, add baking powder, flour and salt. Mix them well.
- Add the flour mixture and 2/3 cup of milk alternately to the butter mixture, stirring until just combined; do not overdo it.
- Gently fold in the toasted pecans.
- Transfer the batter to the greased baking pan, place in the preheated oven at 350°F, and bake for 25 to 30 minutes or until an inserted toothpick in the center comes out clean.
- While the cake is baking, make the frosting by adding confectioners’ sugar, cream cheese, maple extract, butter, milk, and vanilla extract, whisking until smooth.
- Once the cake has cooled, crumble half into a bowl and mix in 1/4 of the prepared frosting. Repeat this process with the remaining cake and frosting.
- Press the cake and frosting mixture evenly into the baking pan.
- Spread the remaining frosting on top of the cake mixture and refrigerate it for approximately 4 hours or overnight until it sets.
- When ready to serve, remove from refrigerator, cut the chilled cake into squares, and serve.
