INGREDIENTS:
6 large Tortillas
1-pound lean ground beef
2 tsp olive oil
1 small onion, chopped
1 medium green bell pepper, diced
¾ cup shredded Cheddar Cheese
¾ cup shredded Monterey Jack Cheese
¾ tsp cumin powder
1/3 tsp paprika
¾ tsp chili powder
¼ tsp black pepper
Salt, to taste
¼ cup green onion, thinly sliced
HOW TO MAKE SHEET PAN QUESADILLAS:
Step 1. Place a skillet over medium-high heat and pour olive oil.
Step 2. When oil gets hot, add green peppers and onions in the skillet and cook for 5 minutes or until they soften.
Step 3. Then add beef to the skillet and continue to cook; crumble until its color is no longer pink, and sprinkle with cumin, paprika, salt, chili powder, and pepper.
Step 4. Lay out 4 tortillas on your sheet pan, creating an overlapping layer, and spread the ground beef mixture in the center in a rectangular shape.
Step 5. Sprinkle on Monterey Jack and shredded cheddar, and finish by adding sliced green onions on top.
Step 6. Gently fold the tortillas towards the center, starting from the sides, and continue the folding by bringing the ends of the tortillas upward.
Step 7. Place an additional tortilla on the top center. This helps keep everything in place during baking.
Step 8.Place the quesadilla in a preheated oven at 425°F and bake for 25 to 30 minutes.
