Ingredients:
½ Yellow onion, finely chopped
1 small green bell pepper, finely diced
¼ cup carrots, sliced
½ cup canned tomatoes, diced
1 tsp. Garlic, minced
1 tbsp. Olive oil
½ cup barley
3 cups beef broth
1 ½ tsp. Worcestershire sauce
1 tbsp. Red cooking wine
⅛ tsp. Thyme, ground
2 cups beef stew meat, cut into small pieces
1 tbsp. Brown gravy mix
Salt to taste
Pinch of black pepper
Parsley for garnish
Instructions:
- Place a large stock pot over medium heat and add olive oil. Add beef stew meat once the oil is hot and cook until the color turns brown.
- Stir in chopped onion and minced garlic; sauté for 1 or 2 minutes or until onions are softened.
- Add carrots, bell pepper, barley, tomatoes, beef broth, Worcestershire sauce, thyme, and red cooking wine to the pot.
- Sprinkle brown gravy mix over the mixture, stirring well to combine.
- Bring the mixture to a boil, then reduce heat and simmer for 50 minutes or until the barley is soft.
