Ingredients:
2 cups ground beef, lean
½ cup nacho cheese soup
1 ½ tbsp. Taco seasoning
½ cup sweet corn, drained
¾ cup cheddar cheese, shredded
4 cups tater tots
Instructions:
- Prepare a 9×9 baking pan by generously greasing it with nonstick spray.
- Place a skillet over medium-high heat, add beef, cook, and crumble until it is no longer pink.
- Drain extra fat from the skillet.
- Add Taco seasoning and sauté for 2 to 3 minutes.
- Stir in corn and nacho cheese soup, and continue to cook for another minute or two.
- Once done, remove the heat and evenly spread this mixture across the bottom of the prepared baking pan and top with a single layer of tater tots.
- Place the baking dish in the preheated oven at 375°F and bake for 45 minutes.
- Once done, remove from the oven and sprinkle with shredded cheese.
- Return to the oven and bake for another 5 minutes to melt the cheese.
- Once done, remove from oven, allow to cool for some time, then slice and serve warm.
