Ingredients:
4 eggs
½ tsp. hot sauce
¼ cup mayonnaise
1 ½ tsp. Cajun seasoning
½ tbsp. Dijon mustard
8 peeled, deveined medium-sized shrimp
Pinch of white sugar (optional)
1 tbsp. olive oil
½ jalapeno, finely sliced
Fresh chives and lemon slices, for garnish
Instructions:
- Place the eggs in a saucepan over medium-high heat, add enough water to cover them by an inch, and bring the water to a boil.
- As soon as the water starts to boil, take the saucepan off the heat, cover it with a lid, and leave it for 10 to 12 minutes.
- Drain the hot water from the saucepan and gently rinse the eggs under cold running water to speed up the cooling process.
- Carefully remove the shells from the eggs and cut them in half lengthwise.
- Gently scoop out the egg yolks and transfer them to a bowl.
- Mash the yolks using a fork, then add hot sauce, mayonnaise, sugar, mustard, and 1 tsp of Cajun seasoning, and blend all the ingredients.
- Place the yolk mixture in the refrigerator and leave to chill.
- Season the shrimp with the remaining Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat and pan-fry the shrimp for 2 minutes on each side or until cooked.
- Pipe the yolk mixture into the egg whites.
- Place a shrimp on top of each deviled egg and garnish with a slice of jalapeno.
