Ingredients:
4 bell peppers (any color)
2 cups ground beef
1 1/3 tsp. olive oil
1/3 cup onion, finely chopped
1 cup cooked white rice
1 1/3 tsp. garlic, minced
1/3 tsp. Italian seasoning
1 ¼ cup canned tomato sauce
1 1/3 tbsp. parsley, chopped
1 cup shredded mozzarella cheese, divided use
Salt to taste
Pinch of black pepper
Cooking spray
Instructions:
- Cut the tops off the bell peppers, remove the seeds and white membrane, and discard.
- Place the peppers cut down in a baking dish coated lightly with cooking spray.
- Add 1 cup of water to the dish, cover it with foil, place it in the preheated oven at 350°F, and bake it for 20 to 25 minutes.
- Meanwhile, heat 1 tsp of olive oil in a pan over medium-high heat.
- Add the ground beef, season with salt and pepper, and cook for 4 to 5 minutes or until the color turns brown, crumbling it apart using a spoon.
- Add onion and cook for another 3 to 4 minutes, stirring occasionally.
- Stir in the garlic and cook for another 30 seconds or until fragrance.
- Add the Italian seasoning, cooked rice, and tomato sauce, and mix well to combine.
- Mix in 1/3 cup of the shredded mozzarella cheese, and adjust the seasoning with salt and pepper if needed.
- Remove the baked bell peppers from the oven, drain any excess water, and flip them over.
- Fill each pepper with the beef mixture and top with the remaining shredded mozzarella cheese.
- Cover with foil and bake for another 15 to 20 minutes.
- Remove the foil and bake for 5 to 10 minutes or until the cheese melts and bubbles.
- Once ready, remove from oven, garnish with chopped parsley, and serve hot.
