Ingredients:
4 egg roll wrappers
1 cup peaches, drained & diced
1 ½ tsp. cornstarch
1 egg, beaten well
2 tbsp. water
1 ½ tsp. cinnamon, divided
½ tsp. vanilla extract
2 tbsp. granulated sugar
1 tbsp. butter, melted
½ tsp. lemon juice
¼ cup packed brown sugar
Instructions:
- Place a skillet over medium-high heat. Once the skillet is hot, add the diced peaches and cook until slightly softened.
- Stir cornstarch with water in a small bowl and add it to the skillet.
- Add granulated sugar and stir well, letting the mixture thicken until the sauce thickens.
- Add vanilla extract and 1 tsp of cinnamon.
- Stir in lemon juice and remove the skillet from heat. Allow it to cool.
- Once the peach filling has cooled down, spoon a filling line onto one end of each egg roll wrapper.
- Fold the ends of the egg roll wrapper over the filling, then roll the egg rolls tightly. Use the beaten egg to seal the seam.
- Brush melted butter over the egg rolls.
- Add brown sugar with the remaining cinnamon in a shallow dish and mix well.
- Roll the buttered egg rolls in the cinnamon-sugar mixture until evenly coated.
- Place the egg rolls on a parchment-lined baking tray and place in the preheated oven at 400°F.
- Bake for 10-12 minutes or until color turns golden brown.
- Once done, remove from oven, leave to rest for some time, then serve warm.
