Ingredients:
1 medium Onion, diced
1 ½ cup Ground Beef
¾ tsp Garlic Powder
1 ½ tbsp. Taco Seasoning
¾ cup Sweet Corn, drained
¾ cup Tomato Sauce
1 ½ cup Beef Broth
¾ cup White Rice
1/3 cup Salsa
¾ cup Mexican 3 Cheese Blend, shredded
Salt to taste
Pinch of Black pepper
Instructions:
- Heat a skillet over medium-high heat.
- Add ground beef once the skillet is hot, and cook and crumble until no longer pink.
- Sprinkle garlic powder, half of the taco seasoning, pepper, and salt over beef. Mix well.
- Once the beef is cooked, add beef broth, tomato sauce, salsa, sweet corn, and white rice. Mix thoroughly.
- Cover the skillet and bring the mixture to a boil.
- Then, reduce the heat to low and let the rice simmer for 15 to 20 minutes or until soft.
- Sprinkle shredded cheese over the top, cover, and continue to cook for another 2 to 3 minutes or until the cheese melts.
