INGREDIENTS:
¾ pound lean Ground Beef
¼ cup Green Bell Pepper, diced
¼ cup Onion, finely Chopped
1 tbsp fresh Parsley, Chopped
1 tsp Worcestershire Sauce
2 tbsp Barbecue Sauce
½ tsp Dijon Mustard
⅓ cup Italian Breadcrumbs
½ tsp Garlic Powder
1 whole egg
Black Pepper, to taste
Salt, to taste
For the Glaze:
2 tbsp Barbecue Sauce
2 tbsp Ketchup
1 tsp Maple syrup or honey
HOW TO MAKE MINI MEATLOAF MUFFINS:
Step 1. In a bowl, add onion, green bell pepper, parsley, Worcestershire sauce, ground beef, Dijon mustard, barbecue Sauce, Italian breadcrumbs, egg, garlic powder, salt, and pepper; knead with your hands until well combined.
Step 2. Divide the mixture into greased muffin cups.
Step 3. Combine barbecue sauce, honey, and ketchup in a separate bowl for the glaze.
Step 4. Top each mini meatloaf with the glaze mixture.
Step 5. Place the muffin cups in the preheated oven at 350°F and bake for 25 minutes until golden and thoroughly cooked.
Step 6. When ready, remove from oven and allow to sit for 5 minutes, then take out of muffin cups and serve with your preferred side dish.
