Ingredients:
2 tbsp. red onion, finely diced
½ cup carrots, chopped
½ cup red bell pepper, diced
2 cups elbow macaroni
¼ cup celery, finely chopped
2 eggs, hard-boiled, peeled & chopped
1 cup water
green onions for garnish
For The Sauce:
1 tsp. honey
1 tsp. Dijon mustard
¼ cup Greek yogurt
¼ cup mayonnaise
2 tsp white wine vinegar
Black pepper, to taste
Salt to taste
Instructions:
- Boil water in a pot over medium-high heat, cook macaroni according to package instructions until al Dante, and rinse with cold water.
- Transfer the cooked macaroni to a medium bowl, add hard-boiled eggs, red bell pepper, carrots, red onion, and celery, and mix thoroughly.
- Add mustard, mayonnaise, Greek yogurt, honey, white wine vinegar, pepper, and salt in a separate mixing bowl, and whisk until well combined.
- Pour the sauce over the macaroni mixture and toss until evenly coated.
- Garnish with chopped green onions and place in the refrigerator until ready to serve.
