INGREDIENTS ;
1 tsp olive oil
4 chicken breasts, thinly sliced
1 ½ cup marinara sauce
¼ cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
2 garlic cloves, minced
½ tsp dried oregano
¼ tsp black pepper
½ tsp salt
Freshly Chopped Basil, as required
HOW TO MAKE THIS INSTANT POT CHICKEN PARMESAN:
Step 1. Set the Instant Pot to sauté on low heat. Add olive oil and let it heat.
Step 2. Add garlic and sauté for 2 minutes or until golden and fragrant. Then add parmesan cheese, marinara sauce, and pepper. Mix well.
Step 3. Season both sides of the chicken breasts with pepper, salt and oregano.
Step 4. Increase heat to medium, place seasoned chicken breasts over marinara in a single layer, and drizzle some marinara sauce on top of the chicken.
Step 5. Place the lid on the instant pot and cook on low pressure for 3 minutes.
Step 6. Remove from heat, carefully open the lid, and evenly distribute Parmesan cheese and Mozzarella cheese on top; cover with lid, keep unlocked, and leave for 4 to 5 minutes or until cheese melts.
Step 7. Once ready, transfer the chicken with sauce to the serving dish.
Step 8. Garnish with chopped basil and serve hot.
