Ingredients:
½ cup Plain Greek Yogurt
¼ cup Applesauce, Unsweetened
¼ cup Canola Oil
1 egg
½ cup Brown Sugar
¼ cup Sugar
½ cup Whole Wheat Flour
½ cup All-purpose flour
¼ tsp. Baking Soda
½ tsp. Baking Powder
¼ tsp. Salt
¾ cup Blackberries, chopped
¾ cup Strawberries, chopped
¾ cup Cherries, chopped
½ cup Strawberry Jelly
Instructions:
- Prepare eight muffin cups by lightly coating them with nonstick spray.
- Add canola oil, Greek yogurt, applesauce, and egg in a mixing bowl, and whisk until smooth.
- Add sugar and brown sugar, and continue to whisk until well blended.
- Slowly add baking soda, baking powder, and flour and salt to the wet ingredients; mix thoroughly.
- Carefully fold in blackberries, strawberries, and cherries using a spatula.
- Fill each muffin cup with one tablespoon of batter, followed by 2 tsp of strawberry jelly on top of each muffin.
- Evenly spread another tablespoon of batter over the jelly to cover it completely.
- Place in the preheated oven at 350°F and bake for 20 25 minutes or until muffins are golden and an inserted toothpick comes out clean.
- Once done, remove the muffins form oven and let them cool in the pan for a bit before transferring them to a wire rack to cool completely.
- Then remove from pan and serve immediately.
