Ingredients:
4 eggs, hard-boiled
1 ½ cups Macaroni
1 rib of celery sliced thin
1 small Red Onion, diced
¼ cup Mayonnaise
2 tsp. Ketchup
2 tsp. White Vinegar
2 tsp. Mustard
2 tsp. Sugar
¼ tsp Paprika
Black pepper to taste
Salt to taste
Chopped green Onions, for Garnish
Instructions:
- Pour water into a pot over medium-high heat and boil; add macaroni and cook according to the package directions. Once done, drain, rinse, transfer the macaroni to a bowl, and set aside.
- Peel the eggs, cut them into half, remove the yolks, transfer them to a separate bowl, and mash them using a fork.
- Add mayonnaise, ketchup, vinegar, mustard, and sugar to the mashed egg yolks and mix until well combined. Set aside.
- Chop the egg whites with a knife and add them to the pasta, then celery and onion.
- Pour egg yolk mixture on the pasta and toss gently until combined and evenly coated.
- Place the salad in the refrigerator for at least 1 hour to chill.
- Sprinkle green onions on top before serving.
