6 cups tater tots, frozen
1-pound lean ground beef
1 small onion, diced
4 garlic cloves, minced
2 cups canned sweet corn, drained and rinsed
2 cups canned black beans, drained and rinsed
2 cups canned cream of mushroom soup
½ cup whole milk
¼ cup sour cream
2 ½ cups cheddar cheese, shredded
HOW TO MAKE COWBOY CASSEROLE:
Step 1. Generously spray a 9×13 baking pan with cooking spray.
Step 2. In a skillet over medium-high heat, add ground beef, onions, garlic, crumble, and brown beef until it is no longer pink.
Step 3. Drain any excess grease.
Step 4. In a separate bowl, create a creamy sauce by mixing cream of sour cream, mushroom soup, and milk.
Step 5. Add this mixture to the skillet and stir to combine thoroughly.
Step 6. Add black beans and the sweet corn to the skillet and stir to ensure a well-blended mixture.
Step 7. Arrange a layer of frozen Tater Tots at the base of the prepared baking dish.
Step 8. Add half of the meat and veggie mixture over the Tater Tots and sprinkle half of the shredded cheddar cheese over this layer.
