INGREDIENTS ;
4 chicken tenders, cut into cubes
1 ½ tbsp olive oil
3 cups cherry tomatoes, halved
1 small yellow onion, chopped
4 garlic cloves, minced
¾ cup fresh mozzarella pearls, quartered
1/3 cup fresh, loosely packed basil leaves, chopped
½ cup balsamic vinegar divided
1 ½ tbsp honey
¾ tsp lemon pepper seasoning
¼ tsp dried thyme
¼ tsp black pepper
1 tsp salt
HOW TO MAKE THIS CAPRESE CHICKEN SKILLET :
Step 1. Add half of the honey and 1/3 cup of balsamic vinegar in a saucepan over medium heat and stir until the sauce thickens. Remove from saucepan from heat and set aside.
Step 2. Add chicken cubes to a large bowl, season with black pepper, salt, and lemon seasoning, and toss gently to make an even coating.
Step 3. Add half of the olive oil in a skillet over medium-high heat. When oil is hot, add seasoned chicken to the skillet and cook all sides for 7 minutes or until color turns brown. Remove from skillet and set aside.
Step 4. Add remaining oil to the same skillet, add onion, and cool for 3 minutes until tender, then add garlic and sauté for 30 seconds or until fragrance.
Step 5. Add thyme, tomatoes, remaining balsamic vinegar, salt, honey, pepper, and lemon pepper seasoning. Increase heat to medium-high and cook for 2 minutes or until tomatoes soften.
Step 6. Return chicken to the skillet. Cover with tomatoes and top with mozzarella.
Step 7. Remove the skillet from heat, cover the skillet, and leave for 2 minutes or until the cheese melts.
Step 8. Drizzle with balsamic reduction, and garnish with fresh basil. Serve warm.
