Ingredients:
8 oz dried elbow pasta
¼ cup unsalted butter
¼ cup all-purpose flour
2 cups cheddar cheese, shredded
1 cup gruyere cheese, shredded
¾ cup whole milk
Pinch of smoked paprika, ground
1 ¼ cups Half & Half
Black pepper, to taste
Salt, to taste
Instructions:
- Fill a pot with water and place it over medium-high heat. Bring the water to a boil and add a pinch of salt.
- Carefully add the pasta to the boiling water and cook it for about a minute less than the recommended time stated in the package instructions.
- Drain the cooked pasta and toss it lightly with a drizzle of olive oil to prevent it from sticking together.
- Combine both cheeses.
- Add butter in a large pot over medium heat. When butter melts, sprinkle in the flour and cook for a minute, whisking constantly.
- Gradually add about 1 cup of the Half & Half, and continue to whisk until smooth.
- Pour milk and the remaining Half & Half, whisk and continue until very thick.
- Remove the pot from the heat, and add 1 cup of the cheese mixture and spices.
- Add another 1 cup of cheese and stir until smooth.
- Add the pasta to cheese sauce in a large bowl.
- Prepare a 2-quart baking dish by greasing it with cooking spray and layer half of the pasta mixture at the bottom.
- Sprinkle 1 cup of shredded cheese over the pasta mixture, then add the remaining pasta.
- Finish by sprinkling the rest of the cheese over the top layer and bake in the preheated oven at 325°F for 12 to 15 minutes or until the cheese turns golden and bubbly.
