Ingredients:
1 cup ground beef
1 small yellow onion diced
¾ cup canned refried beans
2 tbsp. taco seasoning
1 diced Roma tomato
½ cup cold water
1 ½ sliced scallions
1 large bag of tortilla chips
8 cups Mexican blend cheese, shredded
Instructions:
- Heat a skillet over medium heat and add ground beef and onion. Cook for about 5 to 8 minutes or until the beef turns brown and the onions are softened.
- Drain off any extra grease from the skillet without removing beef and onion.
- Return the skillet to the stove and stir in taco seasoning. Then, pour half of the water and bring the mixture to a boil.
- Reduce the heat to low and let it simmer for 3 to 5 minutes or until most liquid evaporates.
- Preheat your oven.
- Spread tortilla chips on a parchment-lined baking sheet.
- Dollop beans onto the tortilla chips, followed by the cooked beef mixture.
- Sprinkle shredded cheese over the top, place in the preheated oven at 400°F, and bake the nachos for 10 to 15 minutes or until the cheese melts and is bubbly.
