INGREDIENTS:
1 tsp olive oil
2 cups pasta, cooked and drained
½ pound ground turkey
½ package of turkey pepperoni, sliced
1 small onion, chopped
1 garlic clove, minced
1 cup canned fire-roasted tomatoes, drained
1 cup tomato sauce
½ tsp Italian seasoning
1 ½ cups mozzarella cheese, shredded
HOW TO MAKE PEPPERONI PIZZA CASSEROLE:
Step 1. Grease a 9×9 baking dish with non-stick spray.
Step 2. Add olive oil in a skillet over medium-high heat. When oil is hot, add ground turkey, crumble, and cook until brown.
Step 3. Add diced onion, minced garlic, and Italian seasoning, and let the mixture simmer until the meat is done and the onions are tender and translucent.
Step 4. Drain extra grease from the turkey meat.
Step 5. Add tomato sauce and fire-roasted tomatoes. Mix well and transfer to a large bowl.
Step 6. Add half of the sliced turkey pepperoni and half of the shredded cheese in the bowl with meat and sauce. Mix well.
Step 7. Spoon the mixture into the greased baking dish and sprinkle the remaining half of the shredded cheese on top.
Step 8. Place the remaining slices of turkey pepperoni evenly across the casserole.
Step 9. Use aluminum foil to cover the dish; place in the preheated oven at 350°F and bake for 20 minutes.
Step 10. After 20 minutes, remove the foil and bake for an additional 5 to 10 minutes until the cheese melts and the color turns slightly brown.
Step 11. Once done, remove the casserole from the oven, leave it to rest for 5 minutes to cool, then slice and serve.
