INGREDIENTS:
1-pound lean ground beef
2 cups egg noodles, cooked
1 ¾ cups canned kidney beans, drained and rinsed
2 cups canned sweet corn, drained
¼ cup black olives, sliced
2 tbsp taco seasoning
¼ cup taco sauce
½ cup tomato sauce
1 cup Mexican cheese, shredded
1 cup salsa
HOW TO MAKE THE “THROW TOGETHER MEXICAN CASSEROLE”:
Step 1. Grease a 9×13 baking dish with a bit of cooking spray.
Step 2. Place a skillet over medium heat, add ground beef, crumble, and cook until brown and mostly done.
Step 3. Drain extra grease from the skillet.
Step 4. In a separate bowl, mix taco sauce, olives, taco seasoning, salsa, kidney beans, corn, and tomato sauce, and mix well.
Step 5. Pour water into a pot over medium-high heat and bring to a boil. Add egg noodles and cook
according to the package instructions.
Step 6. Once done, drain the water and rinse the egg noodles under fresh water.
Step 7. Combine the cooked pasta with the beef mixture and stir it all together until everything is well combined.
Step 8. Spoon the mixture into a prepared baking dish, sprinkle a generous amount of shredded
Mexican cheese on top.
Step 9. Transfer the baking dish to the preheated oven at 350°F and bake for 30 minutes or until the
cheese melts and starts to bubble.
Step 10. Once done, remove from oven and sprinkle some fresh green onions on top before serving hot.
