1 pound shrimp, deveined, and shell and tail removed.
3 tbsp Cornstarch
Salt and Pepper to taste
Oil for frying
For Bang Bang Sauce ;
¼ cup Mayonnaise
1 to 2 tbsp Sriracha
1 tbsp Rice wine vinegar
2 tsp Sugar
Salt and Pepper, to taste
For Egg Rolls Filling ;
8 Egg roll sheets
1 cup Cabbage, shredded
½ cup Carrot, shredded
½ cup Cheddar cheese, shredded
¼ cup Pepper jack cheese, shredded
Oil for frying
How to make Bang Bang Shrimp Egg Rolls :
Step1. Dry the clean shrimp with a kitchen towel and season them with salt and pepper.
Step2. Coat them in cornstarch and fry in hot oil until golden and crunchy.
Step3. In a mixing bowl, combine all the ingredients for bang bang sauce. Taste and adjust salt and pepper. Refrigerate the sauce.
