INGREDIENTS:
4 chicken breasts, skinless and boneless
2 beefsteak tomatoes, sliced
1 block fresh mozzarella cheese, sliced
1 tbsp fresh basil
1 tsp Italian seasoning
2 tbsp brown sugar
½ cup balsamic vinegar
½ tsp black pepper
1 tsp salt
HOW TO MAKE THIS CAPRESE CHICKEN RECIPE:
Step 1. Preheat the oven to 350*
Step 2. Lightly grease a baking tray with cooking spray to prevent sticking.
Step 3. Position the chicken breasts evenly on the prepared baking tray, then place in preheated oven
at 350°F and bake for 15 minutes.
Step 4. Meanwhile, place a saucepan over medium heat, add Balsamic Vinegar, and bring to a vigorous boil.
Step 5. Then reduce heat to low, add Brown Sugar to the vinegar, and stir well; continue to simmer the mixture to simmer for an additional 10 minutes.
Step 6. Once the chicken is done, remove it from the oven, place a slice of mozzarella cheese on each breast, and season with Salt, Pepper, and a pinch of Herbs de Provence.
Step 7. Return the chicken breast to the oven and bake for another 2 to 3 minutes or until the cheese melts.
Step 8. Remove the baking tray from the oven, slice, and place a tomato on each fresh mozzarella slice.
Step 9. Drizzle some of the balsamic glaze over each tomato and serve hot.
